Ginger-licious

(And warning from experience....WAY underbake these....if you leave them in the oven even 30 seconds too long, they'll turn into ginger"snaps" that will crack a tooth.)
Molasses Spice Lemon Sandwich Cookies
2 c. all-purpose flour
2 t. baking soda
1 t. cinnamon
1 t. ground ginger
3/4 t. salt
1/4 t. ground cloves
2 c. granulated sugar, divided
1/4 c. dark molasses
1 large egg
15 T. unsalted butter, divided (12 T. melted and cooled, 3 T. softened)
3 T. fresh lemon juice
2 c. confectioner's sugar
Whisk together flour thorugh cloves in medium bowl. In large bowl, cream together sugar, molasses, egg, and 12 T. melted butter till combined. Add dry mixture a little at a time, beating well. Cover and chill 1 hour.
Preheat oven to 350 degrees. Place remaining 1/2 c. sugar in small bowl. Shape dough into 3/4" balls, and roll in sugar. Place 2" apart on baking sheets. Bake till tops just start to crack, about 4-6 minutes, rotating sheets halfway through. Cool on racks 3 minutes, then remove and cool completely on racks.
Whisk 3 T. softened butter with lemon juice and a pinch of salt. Whisk in confectioner's sugar till of icing consistency. Spread icing on bottom of 1/2 cookies; place another cookie on top to make sandwiches. Makes about 36 sandwiches.
